Full disclosure: there is bacon involved.
Also, I got Lightroom for Christmas - yippeee. BUT I'm still learning how to use it, so my pictures may look a little different until I get the hang of it.
I love this because there's no chopping or dicing or anything. It's a one pot, throw it in there and forget about it kind of thing. No pressure. And did I mention it's freaking delicious? After I photographed it I set it in front of my husband while he watched the Packer/Viking game and a few minutes later he goes "Is that all you made?" while scraping the cracker around the inside of the empty dish. Good thing I snacked on it in the kitchen!!
Black eyed peas are a new years tradition for good luck, so serve this up at your party, brunch, or just to recover from the nights festivities.
Black Eyed Pea Hummus
Ingredients:
1 15.5 oz can black eyed peas, drained
1 Tablespoon olive oil
2 Tablespoons tahini
1/4 teaspoon coriander
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1-2 teaspoon onion (a few slices)
3 slices jalapeno
handful (about 1/4 cup) cilantro leaves
1/2 lime, juiced
3 strips bacon, cooked
1. Line a microwave safe dish with paper towels, lay your bacon on top and cover with another paper towel. Microwave for 4:30 minutes. (Or do it how you like to make crispy bacon)
2. Empty the can of drained black eyed peas into a food processor/chopper. Add the olive oil, tahini, coriander, salt, pepper, garlic powder, onion, jalapeno, cilantro, bacon and lime juice. Puree until smooth.
3. Serve with pita, crackers, veggies, whatver you like!

I love this! Every year, I choked down a few bites of black eyed peas for good luck. Well, I've finally gotten to the point where I actually like them, and I think I would like them even more as hummus! Great idea!

I haven't done much research into doing more with it than basic edits so we can learn together! Your hummus looks delicious, I can imagine why your hubs gobbled it up. I've never had hummus made out of anything but garbanzo beans so I'm excited to try this new recipe!

ReplyDeleteWow, it would never have occurred to me to put bacon in hummus...or to use split peas in place of garbanzo beans. But I love the idea of both. Sort of a cross of the hummus and soup worlds.
