11 Aromatic Rice


I feel like I broke some top secret code, I finally recreated the rice from our favorite Indian restaurant!  I was nose over tail for this rice...I couldn't stop eating it.  I could guess the cumin seed (duh, it was dotting the rice) and saffron (the bright yellow gave it away) but there was something else...I just couldn't figure it out.  Then on our last take out order, there was the answer staring at me from the bottom of the styrofoam box, a tiny clove!  Clove!  I never in a million years would have guessed that.

I recreated this vibrant side dish and served it along with some Indian spiced chicken and broccoli.  And then my guy took the leftovers to make some killer egg, rice and cheese breakfast burritos the next morning, he is a burrito master.  (Love making new meals from leftovers!)



Aromatic Rice

1 cup Basmati Rice
Water (as directed)
2 teaspoons (or more) Indian Cumin Seed
Pinch of Saffron
2-3 Whole Cloves

1.  Cook rice as directed, but add in the clove, saffron, and Indian cumin seed when you add the rice and cook all together.

2.  Remove the cloves before serving!

Enjoy!

How would this work if the seeds and cloves were first crackled/fried for a few seconds to release the flavors in some butter or ghee, then rice added and cooked for a minute and then water added? That's what I would do. That is quite a typical start for Indian Rices and I would think that would release the flavours even more.
