You may have noticed, I'm not big on meat. I would never actually call myself a vegetarian, because well, sometimes a girl just needs a hamburger...or a steak. But I am naturally more of a rabbit (as my hubs affectionately calls me).
Except when it comes to Bacon.
Crunchy, salty, meaty, Bacon.
Give me a BLT and you'll have a friend for life.
BLT #1
Hydroponic Local Yellow Tomatoes
Watercress Leaves
Mayo
Salt & Pepper
White Bread, Toasted
3 slices of Bacon
This was closer to the classic, the watercress has a slight bitter/peppery flavor than regular lettuce, but otherwise pretty standard BLT. And as I mentioned before, these hydroponic tomatoes are a fabulous way to have a summer tomato taste out of season.
BLT #2
Guacamole (I used a Wholly Guacamole 100 calorie pack)
Radish, sliced
Watercress leaves
Bacon
White Bread, Toasted
Socks.Knocked.Off.
Put Guacamole on anything and call it a day. It's delicious. Then the salty bacon shines through, and the radish/watercress combo packs that bitter/peppery punch, it just doesn't get much better than that.
This is totally a get out of the office, go find a bench in the sunshine and sit and enjoy kind of lunch food. Or sit inside and torture your corkers with the amazing aroma of bacon. :)
BLT #1 looks fabulous but I just LOVE BLT #2! How unique, never seen a BLT like this one before! BLT's are pretty much the only way that I enjoy bacon (I know, I'm weird)but I will have to give these a try! :)

ReplyDeleteWe do Guac on our BLT's on occasion so yummy it's normally my sub for mayo. But Radish?? LOVE IT! Never thought of that.
