3 Kale Nachos



Has anyone else noticed Kale becoming quite the star on most food blogs lately?   Don't get me wrong I fully support this, Kale is incredibly good for you and is in-season right now.  I love this dark, earthy green in any soup and it is welcome on my plate, sauteed, any day of the week.  I tried those Kale Chips...errr...umm...no thank you.

My weekend was full of hiking, some local history and football.  These Kale Nachos are my personal answer to the Kale Trend and represent the amount of cooking done this weekend.  And if you care,  I'm now cheering on the Ravens after a terrible, heart wrenching, tragic loss by the Packers.  Sigh.

I am a nacho fanatic.  I love them.  I make a small plate and call it lunch probably 2 times a week.  As a kid my Dad and I used to have a father/daughter date going to Uno's and ordering their enormous plate of nachos.  We'd talk and compare who had the best, perfect chip bite.  The ratio of meat, cheese, salsa, toppings is key, crucial even, to declaring the BEST.BITE.EVER.

Anyway, I actually liked the change of adding Kale to my nachos.  I just chopped a little up and added it on top of the salsa layer and then sprinkled the cheese on top, before popping it in the microwave.  There is an art to layering nachos.  The Kale was slightly bitter, a little crunchy on the edges, but added a deep, earthy taste that was really nice.  

You might even get your kids to eat it.

  1. I have noticed the recent kale trend. I need to start eating it because yes it does your body good. I actually just made some kale orzo today that I will be posting on my blog later. I'm going to definitely make your kale nachos. What a great idea. Looove nachos!!! Thanks for the recipe

  2. I think I'll need a tutorial on how to make ONE plate of nachos. I have a problem of making an entire cookie sheet of nachos, even if it's just me. It might be my weakness for cheese... .

  3. I like kale and add it to pasta dishes and soups and my son wil eat it without even blinking. Although kale chips were not successful in this house lol. No one loved them I thought they were okay. I like the idea of using them in nachos. Seems like a lot of fun.
