Last friday me and the guy had a mini date night to try out a new Thai restaurant. It's one of those places we always drive by but never remember to go to. We sat out on the deck which overlooks a little marina, just a few sail boats tied up along a pier, and looked out over the bay to the bright lights of a minor league baseball game going on at the stadium across the water. I absolutely love places like this, if you couldn't tell! It's so relaxing watching the bare masts of the boat slowly bobbing with the tide, watching the pelicans float by only interrupted by a dive-bombing osprey looking for it's own dinner.
It hit me there, why not make a Thai flavored burger!? A perfect way to celebrate Hellmann's 100th birthday. This burger packs a punch of flavor, you might even say...it works out, it's sexy and it knows it, and, it's ready to party.
Hellmann's is going all out in their celebration of this major milestone. To give back, they are helping provide a million meals to Feeding America to help fight hunger. And then to party down, in New York, they'll be hosting the Worlds Longest Picnic Table called the Blue Ribbon table and Chef Mario Batali has already put his spin on some classic picnic dishes, using unique flavors and of course, mayo!
I was inspired by his use of mayo in his burger and salsa on top of it, which gave me the idea to put slaw on ours! (P.S. Don't miss the chocolate cake.) I hadn't ever considered putting mayo in a burger, but it kept the meat from drying out and gave it a meatloaf-ish texture. I usually buy the 93% beef so it's pretty lean and I used the Canola Mayo because it's only 40 calories per Tablespoon and I was surprised to learn they use cage-free eggs. Anyways, we mixed the curry paste and mayo into the burger and then topped it all off with a crunchy cole slaw with fresh mango and a peanut-soy dressing.

Ingredients:
1 lb. ground beef, thawed
3 Tablespoons Hellmann's Mayo with Canola Oil
1/2 teaspoon fresh cilantro, chopped
3 teaspoons thai red curry paste
1/2 teaspoon sriracha
1 bag chopped cabbage for cole slaw
1 mango, sliced
2 Tablespoons sesame oil
2 Tablespoons apple cider vinegar
1 Tablespoon rice wine vinegar
1 teaspoon garlic powder
2 Tablespoons soy sauce
dash black pepper
4 Tablespoons crunchy peanut butter
1/2 lime, juiced
2 green onions, chopped

Directions:
1. In small bowl mix together the mayo, cilantro, curry paste and sriracha. Place the thawed beef in a large bowl, then add the mayo mixture to the beef and mix together well.
2. Form the ground beef into 6 even patties, place on a plate, cover in plastic wrap and refrigerate for an hour.
3. Empty the pre-chopped cabbage/slaw into a large bowl. Add the chopped green onions and mango and put back in the fridge. In a small bowl mix together the sesame oil, apple cider vinegar, rice wine vinegar, garlic powder, soy sauce, black pepper, peanut butter and lime juice for the dressing. Set aside until just before serving, you don't want the slaw to get too soggy before hand.
4. Pre-heat the grill and cook the burgers for about 4 minutes a side (if you made slider sized) until cooked to your liking. The burgers have a more meatloaf like texture, so you may need to flip them very gently or cook on a grill tray. Just be gentle and they should hold together fine.
5. Build your burger with the slaw and enjoy!! A little ketchup is yummy too.

ReplyDeleteYou say the word, "Thai" and I'm on it in a heartbeat! I LOVE fancy burgers and have never tried a Thai burger. I'm feeling I could really use a hearty supply of mango peanut slaw too. This is making my mouth water, girly!!

ReplyDeleteI am absolutely going to have to try making a vegetarian version of this burger because I LOVE curry paste and sriracha sauce! I am a big fan of coleslaw, too, but have never tried a mango version. Yum :).
