Leftovers, it's a dirty word.
For Easter I made my family's favorite bbq, but that left us with a huge chuck roast to feed only 2 people. After about 2 days of pulled beef sandwiches I decided it was high time I make those leftovers into something new again....
and I had a great excuse to try out my new OXO Egg Beater.
I'll be completely honest here...I was highly skeptical about this product. How could it replace just grabbing a fork for a quick whisk? For starters it does a MUCH better job than my fork did of blending everything together. It was smooth sailing, even with only two eggs.
I actually kind of liked it...
I may have kept on whippin' away at those eggs well after they were mixed.
I wonder what else I could whip...oohh whipped cream? Yes!
I'm easily entertained over here...
So next time you have leftovers hanging around your fridge, get creative and see what else you can turn them into.

Individual Baked Pulled Beef & Grits
Ingredients:
2 cups prepared bbq pulled pork (or pulled beef - I used a Chuck roast instead of pork shoulder)
3 cups cooked yellow grits (prepare according to the package)
3 green onions, chopped
1 Tablespoon butter
2 eggs, beaten
pinch black pepper
pinch salt
1. Preheat the oven to 325 degrees F. Place four ramekins on a baking sheet. Spoon about 1/2 cup of the prepared bbq into the bottom of each ramekin and divide out any extras evenly.
2. Mix the green onions, butter, black pepper and salt into the prepared grits and stir well. Crack the eggs into a separate dish and beat together. Spoon a few tablespoons of hot grits into the eggs, stirring constantly, to bring the eggs up to temperature slowly. Spoon 2 more tablespoons of grits into the eggs, stirring constantly, and then slowly pour the egg mixture into the grits. Stir well until mixed in.
3. Spoon the grits into each ramekin, covering the bbq, and fill each ramekin right to the top - maybe a tad below.
4. Bake for 30 minutes, until the grits have set. Let cool on a wire rack for about 10 minutes and enjoy!




I love leftovers and this is very creative. And...I just got me one of those egg beater thingies, too. ;) Now...what to beat?? :)

ReplyDeleteThat looks delicious! I do a leftover thing with taco meat and cornbread, and this sounds like a great variation on that theme. Which, of itself, is probably a variation on a pot pie, now that I think of it.
Cuisine, it's all just cooks trying to repurpose leftovers . . .

Love the egg beater...women everywhere...grab your beaters!!!! Our great grandmothers would be proud...they must have known about the joy of the beater!!!! Love your photographs...they're heavenly...and can't wait to dig into my own little bbq ramekin!!!
