12 Pepperoni Pizza Bites


Looking up at the cable running from the tree in front of me, ending somewhere beyond the trees across the valley, I swear I heard all the butterflies in my stomach saying "no!". But I turned to my guy and whispered, "I have to go first, if I don't go first I won't do it."  We were on our honeymoon in Fiji, the Morale Office on Guam had a special deal on flights and hotel stays, which we quickly booked before they filled up.  Obviously since my guy flies helicopters, he's a bit of an adrenaline junkie, which I've learned is a good thing because it pushes me out of my cocoon.  I squeeze his hand tight from nerves, maybe complain a little (or a lot), tell him 32947932874 times I don't want to do this, and then always, always love it.  

I tugged at the end of my gloves as he hooked me into the zip line.  He explained again how to grab the cable to slow myself down and then it was time to go.  And did I love?  Heck yes!  We went from tree platform to platform across a lush forest in Fiji, how did I ever say no to this?  We became friends with the people in our group, with everyone clinging to the same tree trunk it's easy to get to know one another.  At the end, I looked at Chris wide eyed, "can we do it again?" 


After I set the plate of these down at our superbowl party, a little huddle of men gathered around them - like wolves, until there wasn't even a crumb left.  The game hadn't even started yet!  I went outside to find my friends lumpia...hey I had priorities...and my guy came out, tearing one of these in half saying it was the last one and he knew I didn't get any.  That's love.

These little pizza bites would be so much fun for a night in.  Get your favorite movie, or start that DVR line up you have saved, and settle in with a plate.  Your kids will love it!  It's just happy snacking food.

Pepperoni Pizza Bites

(makes 24 bites)

2 packages (13.8 oz) Pillsbury Pizza crust
1 package pepperoni, cut into quarters
1 bag shredded mozzarella
1 jar pizza sauce
cooking spray

1.  Preheat your oven to 350 degrees F.  Spray your muffin pan with cooking spray and set aside.

2.  Pop open the pizza crust tube and unroll the dough inside.  Break apart into 12 pieces, using your hands stretch and flatten out each piece.

3.  Place the dough in each muffin cup so that it covers the bottom and sides to form a mini dough cup. Place a little bit of cheese at the bottom so that it doesn't get soggy, top the cheese with a few bits of pepperoni, then about 1/2 a Tablespoon of sauce, and finally top with extra cheese and pepperoni.

4.  Repeat until finished.  Pop in the oven for 10-15 minutes or until golden brown and bubbly.

5.  Let cool for 2 minutes and then remove from pan to finish cooling on a wire rack.  (If you can wait that long!)

    Also, these bites look dangerous. I think I'd plow through a whole plate before I even knew what had happened!

  5. Thanks for the cable story. What a wild ride! I don't do pepperoni, but I'll bet some chopped veggies would be good in there instead: peppers, mushrooms, olives.

  8. Zip lining Fiji is now on my bucket list thanks to your awesome story! I've actually never zip lined and there's one near where I live though probably not nearly as cool as the one you guys did in Fiji! Sounds like you had a fun-filled Super Bowl - best way to watch that game is with a crowed of hungry, raging men ;) Your pepperoni bites look amazing! I used to eat the Bagel Bites that you buy in the frozen section and stopped only because I'd get the evil eye from Garrett...but now I can make an even better pizza bite at home and he'll be addicted to them!
