Did anyone else's inner 16 year old squeal when Justin Timberlake performed again?
Oh yes, he brought sexy back. But I'm a sucker for the Usher-types, a man that can move catches my eye every time.
I haven't watched the Grammy's in a few years, but last night was awesome. I really wanted to see Mumford, Black Keys, and Fun perform...and they were great, but Alicia Keys and Maroon 5 killed it! Okay, yes the song is a little played out but the combo was so unexpected.
And we can't talk Grammy's without mentioning the guy in the feathered headdress Dr. John & the Preservation Hall Band who played with the Black Keys. Outrageous! Perfect little nod to Mardi Gras.

Baked Buffalo Chicken Tenders with Blue Cheese sauce
(Adapted from Cooking Light)
Ingredients:
1 cup flour
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cayenne (optional)
1 egg, beaten
1/4 cup milk
3 tablespoons (or more) buffalo style hot sauce
1-2 cups Panko breadcrumbs
1 pack chicken breast tenderloins, thawed
1 8 oz tub of sour cream
3 tablespoons blue cheese crumbles
cooking spray
1. Preheat your oven to 400 degrees F.
2. Using 3 seperate bowls, fill one with the flour, salt, pepper and cayenne, mix well. Fill another with the egg, milk, and hot sauce, mix well. And the last with the breadcrumbs.
3. Spray a baking sheet with cooking spray and set at the end of the line up of bowls.
4. Dip the chicken in the flour, then the egg and finally the breadcrumbs until evenly coated and place on the baking sheet. Repeat until all the chicken is coated and on the sheet. Bake for 10 minutes, then gently flip each piece over and finish cooking for another 10 minutes, or until chicken is cooked through.
5. In a small bowl, mix together the blue cheese and sour cream. Using the back of a spoon to really blend the cheese in, or you can use a food processor to whip it together.
Serve with a small salad or brussels sprouts, with the blue cheese sauce on the side. Enjoy!


We are big fans of anything buffalo in my house! This is going to be a must make for us!

ReplyDeleteWelllll....I didn't realize the Grammy's were even on last night until I saw it on yahoo news this morning. I did, indeed watch the clip of Justin and Usher though...pretty great! Kinda would have loved to have watched the awards and enjoy your baked buffalo chicken treat. Sounds like a fun, tasty and entertaining evening!
