Challenge accepted!
This week I'm joining The Real Food Runner's green smoothie challenge by having 1 green smoothie a day, sounds so easy why not?! Anyone can join, just head on over (here) and sign up! I love that I can still have a my normal meals, just add a smoothie. Done and done.
For my first smoothie I decided to indulge in some fall flavors. I'm still wistfully pinning outfits with boots, comfy sweaters and scarves even though my thermometer reads 89 degrees.
Apples, cinnamon, flax, and spinach. Which of these does not belong?
I know what you were going to say...spinach. Ewww.
Trick question! They all belong. The spinach is basically just there for color and all the good vitamins...(hmm kind of like the beets...I'm on a roll here)
Okay so it's not exactly like having a piece of pie but it's still really good! You don't taste the spinach at all, just the apple cinnamon goodness. Do something healthy for yourself today and make a green smoothie. I've had another green smoothie this year, a Pineapple-Ginger Green Smoothie, just in case apple pie isn't your thing.

Makes 1 Smoothie
Ingredients:
1/2 cup Vanilla almond milk
handful of spinach
1/2 teaspoon pumpkin pie spice (cinnamon and nutmeg)
1/2 apple sliced
1 Tablespoon ground flax
1. Add all ingredients to a blender and puree until smooth. (It's a little gritty because of the flax)

ReplyDeleteHi Jordyn! This was my first time trying almond milk too. I bought a sweetened vanilla version because I was too afraid of the full on almond milk :) and it's very sweet. It also gave a nice nutty flavor along with the vanilla that made this more "pie" tasting.

ReplyDeleteWhoops, I meant to comment about this when you posted it. Have you ever used kale stems in a smoothie? If you cook with kale, you can either put the stems in with the leaves or you can save the stems for smoothies. I wouldn't recommend using too many stems in a smoothie or else you can start to detect the texture (which I'm not a huge fan of), but this adds a TON of nutrition. Anyway, just thought I'd share the idea since you're going to be smoothy-ing it up!
