14 Pan Fried Chicken Sandwich


Oh weekend, why must you end?

I realize that it is Monday...which should mean that I write something really fluffy. 

Nope.


Instead I'm going to tell you a secret.  Something I've learned the hard way in life, so really you're getting a really great deal here, food and free life lessons.

One word: Intention, purpose, objective.  (ok so that was 3)


One of the biggest things I've learned in my life so far is that communication sucks.  End of story.  Whether it's because of technology or just because we're all different, we come from different backgrounds and just think differently, communicating can be really difficult sometimes.

And what I forget is that the people closest to me, family, husband, etc., although they all may know me really well, I can't read their minds and they can't read mine.

Here's where Intention comes in...

Say I'm telling my sister about a situation I'm unsure or nervous about, and she jumps in telling me ways to fix it.   I could think "she doesn't understand how I feel" or "she doesn't think I know how to handle it".  Hello, Mrs. Negativity right?  Well, really my sister is saying those things because her intention is to help because she loves me.  Now that's the awesome stuff we all want.  So what she initially said to me wasn't what I needed to hear at all, but the underlying intention WAS.

See how if you stop and think, okay what is my (or their) intention here?  You don't just react, but are a little mindful of the deeper meaning.

That's the good stuff right there.

Try it, I promise it won't hurt.  Use it for yourself to really say what you mean, and use it with others to hear they are coming from a good place - even if what they say comes out all wrong.

And now enjoy this Fried Chicken Sandwich, it's incredibly comforting.


Pan Fried Chicken Sandwich


Double dipping in a good way!  We're making a slightly healthier version of the fried chicken sandwich.  A hot summer night, corn on the cob, and a beer all go perfectly with this.


Ingredients:


3-4 Tablespoons Grapeseed Oil
1 pound organic chicken cutlets (or breasts sliced thin)
3 cups All Purpose Flour
1 Tablespoon Salt
1 Tablespoon Pepper
1-2 teaspoons Cayenne
2 eggs, beaten
Sesame seed buns
Lettuce
Tomato
Jalapeno Ranch Dressing (I use Naturally Fresh Jalapeno Ranch)

**You can really build this however you want to, so I'm just going to give the frying directions**

1.  In a large bowl mix the flour, salt, pepper, and cayenne.  Set aside.  In a separate small bowl, add the eggs and beat until mixed.

2.  In a large skillet add the oil and warm over medium-high heat.

3.  As the oil warms up, get your first chicken piece ready by dipping it in the flour, be sure to coat it evenly, and then into the egg, and then BACK into the flour.  When the oil is hot, test by dropping a little bit of flour and see if it bubbles or sizzles, now add the chicken.  Dredge the rest of the chicken the same way.

4.  You may need to turn the heat to medium, you don't want the outside to burn before the chicken is cooked through.   Cook until each side is a nice deep golden brown, about 5-6 minutes per side.  You don't want any pink in the chicken meat.  I usually cut a piece in half to check it, I know but I can't help it!

5.  Set a paper towel on a plate and put finished chicken on the towel to absorb any last oil.  Assemble your sammie and enjoy!

  7. So true about intention. That's something I need to work on, my husband always wants to fix things and I have to remember it's because he loves me.
    That can be hard but definitely helpful for a relationship to remember to focus on the intention!
    And your sandwich- yumm! Comfort food at its best. :)
