11 Mounds Bar Brownies {Winner Announced}

Maybe you need to celebrate, it's girls night, you just broke up with someone, you had a terrible day, you had the #best.day.ever, your dog ate the trash, your dog didn't eat the trash... I can find you any reason to make these completely decadent, blissed out brownies.  I do have one small confession, I don't like scratch made brownies.  I've tried, but I find that Ghirardelli completely rules.  (Ps this is not sponsored by them - just my honest opinion)  I'm going to keep this short and simple, I mean they really do speak for themselves.  And sometimes you just need a quiet moment to close your eyes, tune out the world and savor something good, just let the happy feeling just reach down to your toes.

Did you have your moment yet?

Okay good.

Thank you to everyone who entered the giveaway for the OXO Mandolin this last week.   I can't do any of this without you and am so grateful for your support.  So, the big winner is....

Ooo I love ratatouille! Yours looks gorgeous and so yummy over the whole grain rice :) I've never used a mandolin before, I need to break mine out it really makes the dish look stunning!

Congratulations Kristina!!  I'll email you with the details.

Mounds Bar Brownies Recipe

Ingredients:
(Icing adapted from Williams Sonoma)
1 20 oz box Ghirardelli Dark Chocolate Brownie Mix (you will need Vegetable oil and 1 egg)
1 14 oz bag Sweetened Flaked Coconut
4 Tablespoons Condensed Milk
4 oz. Unsweetened Chocolate, chopped
2 Tablespoons Unsweetened Cocoa Powder
3 cups Confectioners Sugar
1 stick Butter
3 Tablespoons Milk
1 Teaspoon Vanilla Extract
1/8 Teaspoon Salt

1.  Bake brownies according to package directions and let cool completely.

2.  In a large bowl add the coconut and condensed milk, stir together.

3.  Press the coconut firmly on top of the brownies.

4.  In your mixing bowl, whip together the butter and confectioners sugar.  Melt the chocolate in a microwave safe dish, slowly at 15-20 second intervals stirring between each time.

5.  Add the melted chocolate, cocoa powder, salt, milk, and vanilla extract.  Mix until all ingredients are incorporated, be sure to scrape down the sides of the bowl.  Spread evenly on top of the coconut layer, and you're done!

Enjoy!
