2 Tomato and Watercress Caprese
This is one of those dishes that when you start with really great ingredients, it makes all the difference.
I immediately thought of Roots Market, an organic grocery store that is part of the Conscious Corner here in Maryland. Both the yellow and red tomatoes were grown locally in Maryland and hydroponically, which means they are grown in a greenhouse using no soil and receive all their nutrients through water. Let me just say, these tomatoes tasted like Summer. The flavor was bright and intense, nothing like worn out, normal tomatoes you would find in the store this time of year.
I was also really impressed that the Watercress still had it's roots on it. It was like going into my backyard and picking it right off the plant! It's that kind of attention to food quality that I love about Roots Market.
The yellow tomatoes were surprisingly sweeter than the red, and the addition of watercress had a light peppery flavor in place of the usual Basil. I'm addicted to Caprese, especially in the summertime and this is a nice variation on a classic.
Recipe:
Ingredients:
4-5 Tomatoes, sliced
1 Bunch Watercress, just the leaves
1 Ball Mozzarella, sliced
Olive Oil
Salt and Pepper
Slice and layer your tomatoes, watercress and mozzarella. Drizzle with olive oil and sprinkle with salt and pepper.
