3 Lemon Curd Shortbread Cookies
So after all that healthy food I decided I needed something sweet. Yet light. The answer was obvious.
The shortbread is easy, the lemon curd - ok, yes, it came from a jar...but still delicious! and it was such a nice jar, lemon also makes me think of spring...which kind of matches the weather we had this weekend. It was fabulous going around without a coat for a day. I even opened my bedroom window to let the fresh air in. I'm so ready for spring. But for now, I have these cookies.
Oh now that picture is pure bliss. I decided to have some fun with toppings so I picked up some candied ginger and chopped it, lavender buds and poppy seed. But the plate, oh the plate. Kate Spade. Home Goods. Go There. Enough Said.

The nice thing is that the lemon flavor balances out the topping, so it isn't too over powering. My Dad loved the poppyseed.
I was the only one brave enough to try the ginger. It was really good! Brightened up my afternoon perfectly. I'm not ashamed to admit I couldn't find lavender anywhere, I almost got really bummed and then realized my Herbs de Provence had them, so I picked the flowers out and it worked great.
I had so much fun rolling the dough into balls I realized this is a great cookie to make with kids. They would love it and the recipe is so easy, definitely kid friendly all around.

Recipe:
Shortbread
1 cup butter, softened
2/3 cup white sugar
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 Jar of Lemon Curd
Preheat oven to 350.
Cream butter and sugar together. Add the vanilla extract.
Once the vanilla is mixed in slowly add the flour until your dough comes together.
Roll the dough into 1.5 inch balls and place on an ungreased cookie sheet. Press your thumb down in the middle to make a hole.
I baked them just like that for 14 minutes, let them cool and then added the lemon curd and topping.
Devour.

Yum, these look good. I just had lemon curd for the first time recently and really liked it. And you can't go wrong with shortbread!
