Is anyone else ready for Summer? I am.
A year in San Diego and then two years on Guam has spoiled me forever. We've only had an inch or two of snow here but I am over it.
I miss my tan.
And drinking Margaritas in a turtle neck does not have the same effect.
Inspired by What's Gaby Cooking, I wanted to make something with Avocado. Avocado says summer to me. I dug through the pantry and came up with this salad. It would be great over lettuce, in a taco or even over rice. It's sure to cure the winter blues, at least for a little while.
Recipe:
2 Avocados, cubed
2 Tomatoes, diced
1/2 medium white onion, diced
1 can Chickpeas, drained and rinsed
1 can Black Beans, drained and rinsed
1 can Shoepeg Corn, drained
1/4 cup Red Wine Vinegar
1 T. Rice Wine Vinegar
1 tsp. lemon juice
1 tsp. lime juice
2 tsp. Garlic Powder
1 tsp. Cumin
1 tsp. Salt
1 tsp. Pepper
Mix together in a large bowl.
Easiest. Recipe. Ever.

ReplyDeleteI just have to say that I *did* try this recipe and it is OFF. THE. HOOK! I might have toasted a piece of bread (or two), smeared some chive cream cheese, smacked some sprouts and topped with this salad. However, it was hard to refrain from eating it by spoon! Mmmm...
